Half an Eggplant--What to do? REVISITED

I was too late to respond to this one, but I concocted a dip for the Father's Day family gathering.

I roasted an eggplant and scooped out the innards discarding the skin. This was combined with tomato paste, onion sauteed in extra virgin olive oil, garlic, mashed avocados and lime juice. It is tasty but very bland to my palate, and if there is any left over, I will add some hot sauce to my satisfy my taste.
