I LOVE eggplant! But sometimes when I cook it (usually roast) it's totally inedible. Like tonight! I had to throw everything away because it tasted so bad. Maybe I had undercooked it? Also, one time I taste-tested a piece that wasn't done, and it burned my mouth. Not because it was temperature-hot, but because somehing in it literally reacted with my mouth and burned it. So...what am I doing wrong??
