egg whites: storage, safety, etc.

It's "Pancake Day", and I'm the "Shrove Tuesday Jew" (as opposed to the Shabbos Goy) on flip duty tonight, and the recipe will leave several extra egg-whites. Can these be "stored" for use later on? What's the best way to store them, and are there any health issues I should worry about?
I plan to make chocolate chip meringues if I can find some chocolate chips...any/all advice is welcome.
