To celebrate National Pancake Day, we trotted over to US Egg for the vaunted Protein Pancake.... And my oh my, this is a mighty fine cake.
It's moist, with a slight crunch from the whole grain oats. There's no need for butter but I put a little bit on just to add some creaminess. And there's also no need for syrup, as the oats provide a faint sweetness. This pancake is a delight.
And it's offered as a Half and Half, with a half order of pancakes and a half order of one of the potato skillets. I got the Santa Fe skillet, with shredded potatoes, chicken, tomatoes, very flavorful chorizo and green chile sauce, topped with an egg. The savory bold spiciness and chunky texture of the skillet perfectly offset the sweetish creamy cakiness of the pancakes. Whoa nellie, this was a great breakfast. And plenty of food without being overwhelming.
