Whenever I eat spinach that's been sauted in oil, my mouth fills with that strange squeaky sensation, similar (hmm, how's that for alliteration?) to the feeling you get when you eat a persimmon or mango that's not ripe. Does anyone else get this? Does it have something to do with tannins? I'm not sure. Is there a name for this strange sensation? I don't get this when I eat raw spinach or spinach in a soup, only when I eat sauted spinach. Sometimes it's bad enough that I have to stop eating it.
