Help me edit this list: Recommendations for exciting restaurants to try for a European chef

Hi,

I have a friend wbo is an American chef based in Europe. He's coming to NYC briefly at the end of this month and I'm trying to put together a list of new-ish (I think he hasn't been here in a few years) interesting places for him to check out; clearly he's more interested in the food than the decor. Trendy is good, but excellent, exciting food is better; high-end is not a requirement. Can you weigh in? Being the stick in the mud that I am, I'm really not so current on this.

Some things are out b/c the reservations are impossible to get, e.g. Per Se. I need places that realistically he can get into around the end of this month, possibly for lunch if not dinner.

So far I have thought of the following...

WD-50
Spice Market
Cafe Gray
Jean Georges
Biltmore Room
Eleven Madison Park
Wallsé
Prune
Hearth
Jewel Bako
Annisa
Tocqueville

It's a hodgpodge, I know. Any deletions? Additions???

THANKS!
