Eating in Paris Restaurant Bars & Provence Recs

Bonjour! My husband and I are leaving for France next week and, of course, are stuck without some reservations due to the August holiday schedule (I have been calling for about a week and not had much luck getting through). We will be in Paris just for the nights of Aug. 25 and Sept. 7 & 8. My question is whether it is possible to walk-in to some of the places that are always posted on this Board (i.e., Les Papilles, Frenchie's, CAJ, Jadis, Spring, etc.) and eat dinner at the bar in the restaurant rather than at a table, without a reservation. In NYC, this is now how we eat all of our meals out, from high-end places (Babbo, 11 Mad) to the trendiest of foodie finds (Locanda Verde, Momofuku, etc).

Also, we will be spending most of our trip in Provence, in Arles, Avignon, the Luberon, Cassis, etc. While I have reviewed all of the Provence postings, many are rather old, and I would certainly be interested in any new suggestions. We will have a car, so small, hidden places would be especially exciting!
