i'm taking a trip to florence and then tuscany in may. i'm just starting to plan out the vacation, i've got accomodations covered and am setting my sights on food (the whole point of any vacation, really). i am slowly reading through previous relevant posts and i've also started sorting through some of the recommended osteria etc. in the slow food on-line guide. but i am wondering....do i need to have reservations lined up well in advance for most places? i would assume i would need to for more upscale places (cibreo, etc...not sure if i'll be going to any upscale places anyways but we'll see), but for the more neighborhood-ey places too? i have a fantasy that we can just wing it and not decide in advance exactly where to go each evening, but i don't know if that's totally unrealistic (!). it would be especially nice to be able to keep it flexible while we're in the countryside, so we can just daytrip and make it up as we go.....we'll be in volpaia for a week (chianti classico).

if anyone has thoughts on places to go that aren't in the previous threads, let me know! especially for drop-in type places.
