I know this sounds like an extremely silly question, but I have had artichokes a grand total of about twice in my life. I saw a great recipe in Bon Appetit this month for grilled artichokes with sesame dipping sauce that I want to try. The recipe involves trimming top and outer leaves, steaming the artichokes, cutting them into six wedges, cleaning out the choke of course, and then throwing them on the grill.
The six wedges are throwing me off. Even though these things are in wedges, do you still pull off the leaves and dip them in the sauce? It would seem to me that there wouldn't be much left of a leaf after the artichoke has been cut into six pieces.
Any help you could provide would be greatly appreciated! Thanks!!
