drying chiles

Scotch Bonnet | Sep 5, 2001 08:38 AM

This summer, I've had a bumper crop of cayenne and tabasco chiles. I've been drying some by stringing them on thread (making crude ristras) and hanging them in a sunny window.

Here's my question: how do I tell when to take them down and pack them away? In other words, how dry is dry enough? Could I just leave them in the window indefinitely? They're amazingly beautiful....
