Dry-sauteed shredded beef

Anybody know where the real thing can still be had? By real, I mean beef that's almost like jerky in texture--actually hard to chew -- in a fiery, oily sauce with julienned carrots and celery. Haven't had anything but damp imitations since the much-lamented Hwa Yuan on East Broadway closed in the 1980s. Even the version at an otherwise respectable Szechuanese outpost like Grand Sichuan is too wet and soft, too much like the dreaded "shredded beef with szechuan style." I pine for a plate of the real deal.
