I love coconut cake, but I find that mine tend to be on the dry side and dense. I thought that with the ingredients I use which include buttermilk and coco lopez cream of coconut. The cake would be rich and moist. The flavor is incredible, but not as moist as I would like and the cake drys out rather quickly. Does anyone have suggestions or a recipe for coconut cake that has moist flavorcake and not that blah white variety. On another note, I always use an icing that has cream cheese, powdered sugar and cream of coconut. I have never tried the boiled white icing? How does that work on the coconut cake? Is it good?
