Dry-aged explained, please!

As a native of Argentina, I've enjoyed beef all my life long (and that means quite a few decades...), and never EVER heard back there about dry-aged meat. Can somebody explain what it consists in, please? (I just hope it's not another case of the emperor's magic clothes...)
