dried tofu / pressed tofu / fried tofu /fresh tofu

I've recently been really into that sort of tofu - I think it's pressed and then simmered in soy and other stuff. QQ had a truly great version, and 101 Noodle Express had some great versions in their marinated three item cold snack plate.

Where else can I get this? Where else is it good?

Also, fried tofu blocks. In Little Saigon, at the place across the little street from the Three Buddhas mega-mall, is a little all tofu place. I can't remember the name. It was recommended on here. They had really nice tofu, fresh made and fresh fried, and tofu with mushroom in it, fresh made and fresh fried. Glorious dense soy flavor.

Anything like that available in San Gabe?
