Dried shrimp - can I use in place of...

I am making Chinese appetizers tonight for dinner and was just about ready to get my ingredients together...one of the apps was going to be a dumpling, probably pork shu mei.
I usually add a bit of shrimp and just did a thorough search in the freezers, I don't have any at all!

So I'm wondering, can I use the dried? Should I rehydrate or not? And or should fish sauce work instead of shrimp?

Darn it!
