dried chestnuts

I bought some beautiful fresh chestnuts in Booneville (a tiny town in California in the valley leading to the Mendocino coast) at their Saturday farmers' market. The market is very small and doesn't have a huge selection, but it's funky and friendly and I also got some wonderful garlic.

Any good recipes? I've seen salad, soup, pudding, cake......
