I'm hopelessly addicted to uni. Any recommendations on where to get the best (I favor Yasuda) and how to have it. Heard about the uni foie gras risotto at Masa but haven't made it yet and though I've been to Le Bernadin, never tried the urchin scallop dish I've heard about. Also, what about having it in rolls vs. sushi? And do people think that having it with quail eggs is a waste of good uni? I think it gives it a steak tartare texture which I love but it does distract from the pure uni expereience.
