"Doughy" grilled chicken?

My company had a function yesterday and we served some finger foods. One of the things we made was chicken, bacon and pineapple kabobs. The marinade was just some pineapple juice, soy sauce, olive oil and garlic powder - a recipe I've used several times before. The chicken was in the marinade maybe 15 minutes and then skewered and grilled. The guy doing the grilling actually noticed that the chicken seemed "weird" on the grill - kinda falling apart and coming off the skewers. One of the girls tasted a piece and said it tasted like uncooked dough. Of course, the rest of us had to try it too and I almost got physically sick from the texture. There were several things made with the chicken, but only two that had this texture and they only had one thing in common - the olive oil. I know that acid can do this to protein, but olive oil? Does anyone have any idea why this happened?
