Dough that's been laying around for a week

I made pizza dough sometime last week and haven't had a chance to do anything with it until now (put it in a plastic bag and it's now a giant blob). I'm going to make pizza tonight but I made a really large amount of dough (I used close to seven-eight cups of flour) and am wondering if it's possible to make something sweet like a large cinnamon bun/cake with the leftover?

Or can a large round loaf be made like Balthazar's Pain de Seigle using this type of dough?


Also, is it too late to freeze the dough at this point since it's been in my fridge for so long?
