Double-cooked pork

Double-cooked (twice-cooked or sauteed) pork has been my favorite Chinese dish since the seventies. There are two wonderful little Chinese places in Columbia which make absolutely delicious versions of this classic dish. For carry-out, I favor Hunan Diamond at the Harper's Choice village center on the west side of Columbia in Howard county. For eat-in I favor the excellent version prepared at the Garden Gourmet in the Long Reach village center on Columbia's east side. Any other Chowhounds enjoy Chinese food?
