Dominican Republic - Comfort food main course?

I am fairly decent at cooking, and rent a ski cabin with a group of people, one of whom was raised in the Dominican Republic. This year's theme, for me, is comfort food.. I'd like to do a dinner that at some level called out her cuisine.

So, as an app, main course, or perhaps dessert, what dish might work - it has to use US accessible ingredients (although I live in Boston, and can find A LOT of unique items), and to be honest, since the rest of the cabin is US'ers, it can't be "an acquired taste" - so nothing that would freak out us WASPY types... a well prepared main course might be best..

There is pretty much no limit on cookware - I have most everything - nor is there a limit on time as long as I can do it the night before, the morning before, or in the later afternoon.. I do have to spend part of the day skiing..

So, what works, and can you link to a recipe faithful to the original? - Thx..
