DIY Shrub/Drinking Vinegar

I had an amazing non-alchoholic "drinking vinegar" a couple years ago in a Chicago Restaurant- basically a strawberry vinegar drink with soda. I'd never tasted anything like it and was instantly hooked. Since then, I've been on the lookout for recipes and ideas to recreate this special dirink.

I've made a couple strawberry shrubs using a hot method- basically reducing a strawberry/sugar mixture (jam-like) then adding apple cider vinegar at the end. Results have been enjoyable but not as heavy or flavorful as the first one we tried.

I'm on the lookout for recipes and tips- if you have any experience with this unique drink I'd love to hear it!
