Mango, lemon grass and roquefort fritter served with slivers of mock parakeet foie gras and Belgian mixed pulse sticks.

Whole poached baby stoat encased in a filo cradle, layered with Chilean mountain nettles surrounded by a moat of yak's milk broth.

Warmed forchette of pickled bison trotters marinated in an aspic of freshly gathered moonlight forest herbs, served in an upturned pewter bucket.

Gathered from an old newspaper clipping.
