Discoloured sweet potatoes

This didn't happen to me but I'm asking anyway. What would cause mashed sweet potatoes to darken in a metal pan? I don't know what kind of metal, but I'm guessing aluminum. Is it a reaction that has to do with acidity? Or what?

Just wondering.
