My disaster with the famed pear tart

I had three ripe juicy Bosc pears and was ready to make the tart. Ended up using 2 3/4 pears after my toddler ate a quarter of one. I waited the requisite one day before cutting into my tart and found that it was absolutely soggy with pear juices. It tasted okay but I really feel like I'm missing out on something.
