I received a cast iron grilling pan (the kind with the ridges) for Xmas. I love cast iron and cook with it alot, so I'm ok with seasoning and cleaning, but I don't know exactly how to USE this pan for grilling steaks, fish, etc. and it didn't come with any directions. Could anyone give me some pointers? My instinct is to heat it up on high, turn on the exhaust fan and slap the steaks on for a couple of minutes on each side. We like med-rare - so, how many minutes?...can I marinate the steaks?...we usually do a dry rub of sugar and McCormick's Montreal Steak seasoning - will this work with this pan?...any different techniques with fish? Basically, I need any info you can give me with this pan. Thank y'all so much!!
