I'm having a friend over for dinner tomorrow night who's diabetic. I'm not sure what kind it is, but I know that the needs minimize intake of simple sugars, simple carbs (e.g., white rice, white wheat flour, etc.), and to some extent fat. Previously for him I've made grilled flank steak with lentils, and on another occasion meatloaf with whole grain polenta, with various vegetables each time. He was happier with the first meal. This time I'm going to make one of my new favorites: farinata (chickpea flour torte), but otherwise I'm feeling uninspired. Any suggestions? Note that I want to make dishes that are naturally suited to the diet, I do not want to use Splenda or other artificial replacements.
