Dining at the Hotel Del Coronado

I'm going to be at the Del with my GF later this month for a couple of nights, and I was hoping for some insight into the current state of dining at the hotel.

We're going to do the Sunday brunch for sure, just because; however, I'm curious about both the Prince of Wales and Sheerwater. I know they're expensive, but that's all I know. The Prince of Wales menu certainly sounds nice.

The idea is to eat only at the hotel or within walking distance; we do not intend to get into the car at all until we have to leave. I know that limits our options, but so be it.

Also, does anybodyhave experience with the restaurant in the boathouse, where the Chart House used to be? Or that place Brigantine, across the street from the hotel?
