On my last visit to Din Tai Fung in Arcadia, I noticed that the shrimp in every dish I ordered seemed to be overcooked. First there was the pork and shrimp juicy dumpling. It was overcooked and dry (chewy and leathery), eventhough the dumpling itself was good. The shrimp problem repeated itself; with the pork and shrimp shumai, with the shrimp placed on top; and again with the shrimp fried rice.
I was not disappointed by their juicy pork dumplings (which is their signature item), but I'm surprised that their shrimp was consistently bad, especially since they actually charged more for anything that contained shrimp.
