Difficulties creating homemade curry powder

Bill_Rizer | Dec 3, 201901:24 AM     4

For a while now, I have been trying to duplicate store bought curries (such as McCormick) by mixing and grinding whole spices. Unfortunately I have had no success. My curries don't taste "bad" but the spices smell "off" (coriander powder in particular seems to smell differently when ground fresh vs. store bought powder). Generally my curries oscillate between being too peppery or being too sweet- I can never get it to where it "smells" and "tastes" like curry powder. It almost feels as though I am using a different stock of spices than what the commercial curry powder makers have.

I am using a coffee grinder to grind my spices, if that makes any difference.

My recipe is combination of reading many a curry powder recipe online and using the ingredient list on the back of commercial made curries. Unfortunately, that last method is a bit imprecise since you can't really know how much each spice is used, only which ones are more than the others (i.e. the 1st spice listed is more than the 2nd, etc.)

Below is my recipe:
4g Fenegreek
3.5g Cumin
3g Yellow Mustard
2.5g Corriander
1g Turmuric
1g Ginger
1g Mace
1g Fennel
1g Black pepper
1g White pepper
1g Red pepper
1g Cardamom
0.5g Kashmiri Red Pepper
0.5g Cinnimon
3 Cloves
1 Bay leaf
3 Allspice pods

Any thoughts on how I can make my curry more in line with store bought would be appreciated. Thanks in advance.
