Best Diana Kennedy book? (and general cookbook inquiry)

I am looking to buy a cookbook for a friend for Christmas who is a competent but not superskilled cook, and is also a pescetarian/vegaquarian. I was thinking about buying either the Essential Cuisines of Mexico or From My Mexican Kitchen. Can anyone tell me which would be better? I need something that has recipes easy enough for the cookbook to be useful (maybe a Cook's Illustrated level of difficulty, if that helps).

If those would not be very useful for what I'm looking for, can you recommend a cookbook that would be better? I'm trying to avoid Moosewood-type cookbooks, and it doesn't have to be meat-free, but I do want to avoid anything that is mainly meat (obviously).

Another one I was thinking about getting is Marcella Says. I know Essentials is the classic, but I think the extra bits of info in Marcella Says would be helpful. Any thoughts?
