Well, for one reason or another I've been making about a cake a week for my work colleagues. And, I've actually enjoyed this because I love baking, and love the fact that I'm not the only one absorbing the many calories contained in each of these confections.
Next week we are having a going away party for a member of the team. It is a luncheon--as of now 18 people are definitely coming, and an additional 8 people may decide to come. Since the guest of honor loves peanut butter and chocolate, I am planning on making a devil's food cake with peanut butter buttercream inside and chocolate buttercream outside. Very simple, but very tasty
But, I want another dessert to serve as well...both for those individuals who don't like the amazing possibilities that peanut butter and chocolate have to offer, and because there simply won't be enough cake for everyone.
Do anyone have any suggestions for a second dessert? Originally I was thinking the cookie/bar route, but I'm a bit stumped as to what to make since I think I should avoid anything with nuts or chocolate because of the flavors in the cake. My next idea was to make a simple pound cake and perhaps bring some berries or whipped cream to serve with it, but now I am thinking that individual desserts would be best.
So, does anyone have either an amazing cookie/bar recipe, or at least an idea for a cookie/bar that I should try and track down a recipe for? Or, can anyone suggest a different dessert route (cake, trifle, etc) that can be made at least a day ahead, that is easy to cut/serve, and that is very different, flavor-wise, from a peanut butter and chocolate cake?
Thanks in advance and happy eating!
