dessert question

have you hounds any new and exciting dessert experiences to report? i'm a culinary student at ICE, and i'm trying to trail at different restaurant pastry kitchens while i have a bit of spare time. (for those who may not know, "trailing" is an industry term for arranging to help out, unpaid, in a restaurant kitchen in exchange for valuable experience/exposure, the chance to build your resume, the guidance of a talented mentor, etc.) so far i've been to jean-georges and 11 madison park, but i'd love more suggestions. i hear that oceana's pastry chef is doing marvelous work; craft, too. anything i should know?

i'm also interested in restaurants whose desserts have an east asian flavor component to them. having grown up eating things like anko, i want to start experimenting with them myself. off the top of my head - asiate, geisha, matsuri, and kai came to mind, only b/c i know that their menus feature asian-inspired desserts. i haven't been to any of these places, i'm afraid, but i'm sure that some of you hounds have, and i'd be very grateful for your help!
