Demeyere Ceraforce, Duraslide, ControlInduc and Grill Pans

Libranflight | Jul 1, 201608:11 AM     12

Anyone have an experience with any of these products/features? I am looking to place a final order sometime in August and am wondering if any of these products/features are most advantageous.

Disclosure: I am a new owner of a portable induction burner, so I have only a little experience with induction so far.

I am definitely going to put a Demeyere grill pan on my order, but which one? I feel I like the Industry handle better, but the other has ControlInduc. Now, I was told ControlInduc is most important for coated pans. This brings me to the other part of this, non stick properties for eggs and such.

Ceraforce vs. Duraslide vs. Thermolon for eggs and such. Are Ceraforce and Thermion the same coating? I have read ceramic coatings get LESS non-stick over time even though they are more durable to the PTFE coatings such as Duraslide.

I am thinking I would like a Duraslide with ControlInduc for eggs and such to protect the coating on the pan and my parrots. But maybe it is not so necessary to have ControlInduc on the uncoated grill pan????

Are there any negative impacts of ControlInduc, i.e. a cooking situation where it would be undesirable? I am thinking I would never want the grill pan to get hotter then its limit anyways. I really do like the handle better on the grill pan without ControlInduc...

Since I have always used a gas cooktop, I am not familiar with setting cooking temps on anything except baking. So I am learning how to use induction temperature control to my advantage now.

Anyone with any of these pans and/or features, please share your opinion on what you like and dislike about them.

Thanks!!!
