Delicious use for Trader Joes frozen Rock Shrimp

MV | May 4, 2005 10:30 PM

Not really wanting to cook yet in the mood for something tasty I looked through my freezer looking for something to hit the bill. I found half a bag of frozen rock shrimp and made something really good that i would like to share.
Mind you the measurements are not exact as i really dont measure when i cook.

I started by chopping up two garlic cloves, three scallions, and two slices of ginger minced. I got a pan nice and hot with about a tablespoon and a half of peanut oil and cooked the ginger(and a pinch of kosher salt) for about a minute then added the scallion whites and continued for another minute. After adding the garlic and letting it get fragrant i dumped the still frozen shrimp into the the mixture. When this got back up to temperature i added about 2 1/2 tbs of mirin, one tbs soy sauce, one tbs rice vinegar, a few dashes of hot sauce and about a tsp of sesame oil. I cooked the shrimp until they were done and rempved them from the sauce(which has more liquid due to the shrimp) and reduced it by half before finishing it with a pat of butter. I tossed the shrimp, sauce, chopped cilantro and the scallion tops with some udon noodles i had cooked.

It really made for a fantastic, quick and easy dinner.
