2 Blocks Firm Pressed Tofu
2 Cups Water
1 Cup Light Brown Sugar
1/2 Cup Sea Salt
3 tbsp. Black Peppercorns
4 tsps. Dry Juniper Berries
3 tbsp. Pink Peppercorns
2 Bay Leaves
3 tbsp. Cumin Seeds
2 tsps. Ground Cloves
5 Cloves of Smashed Garlic
1. Add all the ingredients into deep pot and bring to a boil.
2. Remove from heat and leave to cool.
3. Place the blocks of tofu and submerge in the liquid for 30 minutes.
4. Remove and dry.
* The liquid may be used again. To reheat the tofu, place on baking paper and into the oven until golden brown.
