Deli meat sandwiches- how do you 'spruce' it up?!

I love deli meat! Turkey/beef pastrami, smoked ham, oven baked turkey et al (except chicken)

It's convenient, fast and satisfyingly filling! But there are times I do get bored with just the usual condiments, my go-to being pepper jack cheese, pickles and of course mayo and mustard, though I often skip mayo.

Do you guys have your own way of making these sandwiches different and tastier? If nothing else than just to break up the monotony? Maybe it's the bread, unusual condiment(s), different cheeses, something sweet or spicy...

I have crunched up corn chips in the sandwich (tasty if messy) and smeared Sriarcha on bread (awful! considering I love sirarcha and everything spicy). Yet one of the surprisingly delicious sandwiches I had (at a catered event) was smoked turkey with pickled onions..a condiment I wouldn't have thought of otherwise, hence this post.I feel I may be missing out on some ingenious pairings.
