Northgate seems to have stopped making the central american chorizo de bolita with the corn husk ties alltogether and now just feature a longaniza at their cheese counter.
I bought a pound and was pretty wowed by its quality. I found out it is made by a company called Jimenez and even the workers at the counter really like it. When I was cooking it - I had to add oil to the pan because it was almost pure lean ground pork with a great deep brick red color. It not salty and the vinegar element is very minimal. There was barely any 'offal scent' when it was being cooked either.
You guys may want to pick up some to make some really great chorizo and eggs.
