I wonder if any owners of De Buyer Inocuive/Prima Matera copper cookware can tell me if the copper finish is harder to polish compared to the copper finish on Mauviel and Falk copper cookware ?
I find the copper finish on my Falk copper cookware surprisingly easy to polish and clean.
I'm planning on getting two frying pans from De Buyer in their Inocuivre series, since the weight of the slightly thinner 1.8 mm De Buyer copper cookware is 20% lighhter than the 2.5 mm copper cookware from Falk and Mauviel.
Since my plan is to use these two De Buyer copper frying pans as my vegetables sauté pans, I will tend to hold them in my hands more often to jump my veggies, so a comfortable handle and a somewhat lower weight is a good thing regarding these two pans.
But if the copper finish is a PITA to polish, I might consider the Falk 2.5 copper frying pans instead, even though their weight are on the too heavy side for jumping vegetables.
