De Buyer Carbone Plus Oven Seasoning

chefbn | Jan 5, 201901:52 PM

I’m looking at the Carbone Plus carbon steel fry pan by De Buyer but I’m confused about how oven safe the pan is and whether it can be oven seasoned.

The official De Buyer FAQ states that the iron handles used on their pans are coated in an epoxy and are oven safe at 200 degrees C for up to 10 minutes.

I’ve read countless posts on here and other forums where users claim to have seasoned the pan in an over at 250 C for over an hour. Wouldn’t this damage the handle?

Have you got this pan and do you use it or season it in the oven?

I know you can get it with a stainless steel handle; are they any good? This means it can go in an oven for longer and for higher temps so I guess that this configuration would be oven safe.
