Another dan dan noodle question

Hi - I just moved to Boulder from LA and there's not much good Chinese food here. Have been trying to make dan dan noodles at home using Fuschia Dunlop's Land of Plenty (both recipes) but even after using less soy sauce, rinsing the ya cai and cutting out extra salt, they are still overpoweringly salty. Any advice?
