DAL - January 2022 Home Cooking Dish of the Month

This is the reporting thread for our January Dish of the Month, DAL.

We had some excellent discussion in the voting thread about the difference between dal the ingredient and dal the dish. For DOTM, our requirement is that we cook a dish - an ingredient is not a dish. So for the purposes of this month's cooking, your dal should be the legume-based dish with origins on the Indian subcontinent that we generally know as dal (the dish). Dishes of European origin containing dal the ingredient are not included in this DOTM, nor would be Indian dishes that contain split lentils but are not dal the dish (dosa, for example, contain lentils but are not dal the dish). I hope that is clear enough, but as usual, there are no DOTM police, so just do your best.
