Non-Dairy Potato Soup

Nasty, cold, and windy here but all is well as I just now made potato soup. I ate this in a Polish restaurant, fell in love with it, and have been making it ever since. 1) Make a nice strong chicken broth and strain it through a colander. 2) Add to it a bunch of cut-up potato and a little dried dill. 3) Simmer until the potato is soft then smash the potato with an old-fashioned potato masher. That's it. It's a rich chicken broth thick with potato bits.
