Having about 20-25 people for a party, and looking for a dish that can work as a substantial main/side for my vegetarian friends - so rice, pasta, grain. But I also want it to be dairy free (all my good party pastas have cheese). For the past few years I've made this great rice dish with sun-dried tomatoes, but I was hoping to try something new. I don't have chafing dishes, but all my other parts of the menu are oven to table so even if it's a quick sauce/boil pasta, I can do that at the party. And the food is eaten pretty quickly, so I don't need to worry that it sits for a while, even though it is a "buffet".
If curious, the menu is:
Appetizers: mini mac and cheese; crostini with carmelized onion & bacon; crostini with white bean & rosemary; crostini with buffalo cauliflower; antipasto platter with olives, pickled green beans, and whatever else looks good when I shop
Mains: citrus salmon; spinach stuffed chicken breasts (has cheese); arugula and red onion salad with vinaigrette, spicy roasted Brussel sprouts; green beans with orange and hazelnut;
Dessert: Black Pepper Cookies, Chocolate Mint Cookies; Orange Rosemary Bundt Cake; (maybe something else, but I often get lots of sweets brought by guests)
