Cutting Baby Potatoes Ahead of Time

I know you're supposed to soak potatoes in water if you cut them before-hand. But I've already washed and dried these baby potatoes which I'll be roasting in 3 hours. Can I cut them in half now if I coat them in olive oil (and herbs) right away? Will they still turn brown? I'm hoping the olive oil will protect them from turning brown.
