How to cut book/bible/leaf tripe?

Thought I bought honeycomb, but I just took the tripe out of the bag and saw that it's all a bunch of little layers/leaves. I'm making an Eastern European tripe soup (never made it before) based on my MIL's recipe. I need to cut the tripe into small strips. Do I cut across the leaves/layers or in line with them? Does it matter?
