I found an unlabeled cut of meat in my chest freezer and I'm trying to determine what it is so I can cook it correctly.
It's 4 lbs 5 oz, boneless, 1.5-2" thick with a thin fat layer on one side. It's possible this has been cut cross grain. The packaging includes our name and the word "cured". The cut itself is not cured but when we purchased half a pig, we did have some of it cured. Around the same time, we still had portions of a quarter cow in the freezer as well. This cut of meat initially looked very much like beef to me but the "cured" is throwing me off.
Any ideas about what cut I might have on my hands?
