so far, these are the best i've had. what makes them better?

superior bread. i think they use italian gyro bread instead of that crumbly stuff.
superior pork. juicy, not dry, and quite flavorful.
superior pickles. they actually taste like pickles instead of chemicals.
be warned that they will put american cheese on your sandwich (along with swiss) unless you ask them not to.

i would describe the cubano at spanish-american food as a legitimately good sandwich by any measure.

for the sake of comparison, i found the one at margon tolerable but bland, and i thought the version at brisas was almost inedible because of the poor quality of bread, pickles, and cheese.
