Cubanissimo Cuban Food Truck | Paso - SLO - Santa Maria - Lompoc

Cubanissimo launched its food truck a little over a year ago. It's been on my radar, and finally the truck's schedule and mine coincided for me to catch up with it last month at one of its regular lunch stops when I was passing through San Luis Obispo. The Santa Maria-based food truck publishes a two-week schedule of lunch and special event appearances between Paso Robles and Lompoc.

If you're anywhere close by, the brightly painted truck is easy to spot.

And if you still can't see it, roll your window down and listen for the rhythms of Cuban jazz pouring out over the hum of the generator.

One of the reasons I was so hot to check out Cubanissimo is that I'd read that it was using authentic Cuban bread baked to its spec by a local bakery. Too many places out here serve up Cuban sandwiches on the wrong kind of bread.

I had a hard time deciding between the Cubano or the Medianoche plate. The Cubano won out, and yes, this is the real deal made with the light, soft-textured bread grilled on the plancha. I could have used a bit more garlic on the pork, yet this was a fine example nonetheless. And the yucca fries were outstanding, so light and crisp. The truck will sell the Cuban bread alone too if you want to take some home. Just call a few days ahead of time to put in an order.

The $12 sandwich plate pricing might seem on the high side. But it includes the side of yucca fries and a drink. And not just any drinks, Cuban-style flavors, such as this Ironbeer soda.
