What are those crunchy white parts in spare ribs?

Howard_2 | Apr 1, 2008 10:16 AM

Pork ribs contain a piece of cartilege that's not connected to the bone. These pieces are white, typically around 1/3 to 3/8 in. in diameter, maybe roughly 1 in. long.

Can someone tell me what they are?
